The results of all the cations, confirmed by the plantation analyses, were excellent . A high quality grape was being obtained.

But at the time took place, from the year 2002, an impressive restructuring process in the region. Its main aim was the vine growers' obtaining of quantity and not quality, what made the wine grape market sink.

As a result it emerges either the giving up of quality obtaining systems favouring more profitable ones in the planting aimed to quantity matters, or keeping the same planting criterions on the added value in the wine elaboration.

The decision of building the winery followed the same aims as the vineyard : quality above any other consideration. That is why it was decided to build it with a maximum capacity of 24.000 wine litres per year.

The intention is that the whole process is controlled by an only person : vine grower and wine producer at the same time. More capacity installations would involve necessarily an important increase of at least 180.000 elaboration litres in order to afford the added cost the new workers would require and as a result, a decrease in the proposed quality level.

The winery has been built in an existing warehouse in the state which was specially set up for this purpose.
